Tips & variations

Slice It Thin

Thin pumpkin slices cook through in the short bake time. A mandoline makes this quick and even, but a sharp knife works too.

Handle the Heat

Habanero is very hot, so use just a few thin slices and wash your hands afterwards. Swap for a milder red chilli if you prefer.

Crispy Base

Preheat your baking tray in the oven so the dough starts crisping the moment it goes in.

Classic Lardons Version

Skip the pumpkin and feta and top with sliced onion and smoked bacon lardons for the traditional Alsatian flammkuchen.

Vegan Version

Use a plant-based crème fraîche alternative and swap the feta for crumbled vegan feta or toasted pumpkin seeds.
